Have you been wanting to learn about the International Dysphagia Diet Standardisation Initiative (IDDSI) https://www.iddsi.org/, but you don’t know where to start, and you feel overwhelmed by the information on the IDDSI website? Come join the IDDSI Masterclass sessions @SPoDDis 2026 to deepen your understanding and increase your confidence in using the IDDSI standards.
The AM sessions are designed to help you learn about the IDDSI Framework through hands-on activities that allow you to practice the IDDSI Flow Test to assess drink thickness and the IDDSI Texture Tests to determine the ideal characteristics and properties of food textures.

SESSÃO PRÁTICA "IDDSI Culinary Challenge"
The PM session is an IDDSI culinary challenge in which participants will apply their practical knowledge of IDDSI from the AM sessions and their previous experience to modify the texture of a ‘popular’ Portuguese food item to a specified IDDSI texture level.
Teams of participants will work collaboratively and collectively to compete against each other to be crowned with the title of Masterclass IDDSI & SPoDDis 2026 winners.

▪▪ Teams Challenge to prepare the Mystery ‘Popular’ Portuguese food item to a specific IDDSI texture level

▪▪ Judging of texture modified Mystery ‘Popular’ Portuguese food item based on:
